Super Simple Vegan Blondie Recipe

It's been a while since I've written anything food related on my blog and I realised I have never actually posted a recipe on my blog? Which is kinda weird considering I love to cook and bake, so I thought why not post some on my blog.
Blondies resemble a traditional chocolate brownie but instead of cocoa, you replace it with white chocolate and vanilla.
I think brownies look so appealing but I'm not really a huge fan of chocolate cakes, I much prefer sweet white choc/vanilla flavours compared to a full on chocolate brownie so I thought I'd try and make blondies,  I find them a lot lighter to eat and they are insanely good!
Whether you want to bake for a party or gathering or if you want something to bake with the children while they're on their half-term holidays this recipe is great.







Prep - 5 minutes

Baking time - 20-25 minutes

Serves - 10-15

Ingredients 

♥︎ 200g Melted Dairy Free White Chocolate 

♥︎ 20g Chopped Dairy Free White Chocolate 

♥︎ 175g Self Raising Flour 

♥︎ 110g Golden Caster Sugar 

♥︎ 1/2tsp Salt

♥︎ 1tsp of Vanilla Extact

♥︎ 5tbsp of Almond milk/Coconut milk (depending on your preference you can use any milk you like but these are my two faves)

Method

♥︎ Pre heat oven to 180 degrees/Gas mark 4 and line your baking tin with grease proof paper.

♥︎ Melt 200g of chocolate in a glass bowl above heated simmering water on a pan (also known as a bain marie) this will melt the chocolate but be sure not to get any of the simmering water into the melting bowl of chocolate because it will ruin it, you can heat it in the microwave though but it can burn easily so keep checking it if your using this method.

♥︎ Sieve flour into a large mixing bowl and stir in the sugar and salt, then mix until fully combined, then add 1tsp of vanilla

♥︎ Next, we add the liquids - melted chocolate, milk and then mix to combine everything together - Remember if the batter is too thick or crumbly just keep adding a little more milk each time for a smooth thick batter

♥︎ Once combined throw in 20g of chopped chocolate chunks and fold into the mixture -  you can also put some hazelnuts, pistachio or anything else you prefer.

♥︎ Spoon the mixture into the baking tin and pop in the oven for 20-25 minutes - Blondies should be firm and crumbly on the inside and super soft and moist on the inside. I Check around the 20-minute mark but this is just a guide it all depends on how thick your blondies are/how deep your baking tin is.



I think these are going to be my go-to bakes if there is a family gathering or I have a chilled Sunday with my nieces or nephews this will be perfect for half term bakes! So simple and Vegan, of course, if you need to switch to gluten free you can find a gluten-free flour to use.
